Do you want to eat more veggies?


I'm not a fan of vegetables.  Never have been.  We didn't eat a lot of vegetables in my house growing up; we ate baby carrots, frozen corn (which I hear is a grain, not a vegetable), frozen peas, canned green beans, and an occasional salad...but that's about it.

It's one of my life goals to learn how to prepare delicious vegetables--to teach myself (and my future kids) to like veggies.

Luckily for me, another English teacher at my school, Kristen, is incredibly devoted to health and fitness.  She is amazing!  She is a teeny tiny little thing, but she is also super buff and can lift some serious weights.  

I often ask her questions about nutrition, and I recently asked her to start a weekly post on her health/fitness blog of easy, "non-scary" vegetable recipes.  She agreed!

I think she will be posting an easy veggie recipe every week in my honor (she actually titled the series "Rachel's Recipes"), and I've promised her that I will try them all.  If you'd like to join me in the quest to eat more veggies, check out Kristen's blog here.

    One super easy veggie to do is just chopped up yellow squash (like in half moon shapes) sauteed in a little olive oil and seasoned with salt and pepper. very good! you can do the same thing with zucchini as well, and adding some onion is always good for flavor.

    and fajitas with chicken, red, yellow, orange, or green peppers, onion, and taco seasoning is a good way to get some veggies without even noticing. I just saute the meat and veggies separately (use a little olive oil), add the seasoning and combine. Very tasty!

  3. I love to steam broccoli and then put a little butter and salt and pepper on it. SUPER easy and yummy. Not really a recipe, but I like it. Same deal with zucchini.

  6. We love roasted sweet potatoes. I peel, and cube them, and bake them in a casserole dish with a little olive oil, s&p, and drizzle them with honey when they are done

    I also have an intense dislike for green beans except prepared one way. I clip the ends and boil them for a few minutes. Then I saute them with a little chopped onion and garlic for a min, add 2 tablespoons of soy sauce and sesame seeds (you can toast the seeds too) yummy!

  7. Over the summer we started having a weekly veggie night. We started it to be healthier, but it ended up being one of our favorite nights of the week. I realized my problem with vegetables on a regular night was that once I'd figured out the main dish, I didn't have much time or energy for anything more than frozen peas (or for a change, frozen corn (which, I've heard too, is a grain not a veggie)). But on veggie night, when the focus was the veggies, we enjoyed a little more variety. It was still pretty simple stuff, so 3 or 4 veggie dishes didn't take much more time to prepare than an pan of chicken, or whatever.

    Veggie night was never a huge hit with the kids. And Shane rarely makes it home for dinner these days, so it's kind of fizzled, since cooking just for me isn't much fun. But I do have some yummy recipes you should try. And someday soon, when I haven't already left a 5000 word essay comment, I will give them to you.
